My go-to breakfast is usually a smoothie or a bowl of oatmeal. But when I’m in need of a little variety, I’ll make a bowl of berry chia pudding.
As the name suggests, this recipe is made with cha-cha-cha-chia seeds. The word “chia” is the Mayan word for strength, which makes sense considering it’s rich in protein.
But this Berry Chia Pudding is more than a great source of plant protein! BERRY CHIA PUDDING
SERVES 1 | VEGAN, GLUTEN-FREE
Ingredients:
- 1 tsp Forever Beautiful mix
- 1 tsp Energy Bomb mix
- 250ml plant-based milk
- 50g mixed berries
- 50g chia seeds
- 2 tbsp maple syrup
- 2 tbsp shredded coconut
- toppings (optional)
Directions:
- Combine all of the ingredients in a jar or bowl.
- Cover and refrigerate for at least 3 hours
- Add more berries or toppings, if desired, and enjoy cold!
